Apple Couscous Salad

Pearl Couscous 1 cup
Granny Smith Apples 2
Italian Parsley, chopped 1 cup
1 cup Fresh Dill 1 cup
Leaves fresh mint, chopped 6-8 leaves
Leaves fresh basil, chopped 6-8 leaves
Lemon, juiced 1 medium
Extra virgin olive oil 1/4 cup
Salt & Pepper, to taste

Perfect Vegetarian Recipe for a Side Dish or Light Lunch.

Apple Couscous Salad Recipe   Directions:

  1. Cook couscous in lightly salted water according to package instructions. Couscous should be prepared al dente. When finished cooking set aside.
  2. In a large serving bowl add apples, parsley, dill, mint and basil. Toss to combine.
  3. Add couscous to bowl. Combine with apple and herb mixture.
  4. Prepare dressing by combining lemon juice, olive oil and salt in a small bowl or jar.
  5. Pour dressing over salad mixture and gently toss to combine.
  6. Serve immediately.
