Pearl Couscous | 1 cup | |
Granny Smith Apples | 2 | |
Italian Parsley, chopped | 1 cup | |
1 cup Fresh Dill | 1 cup | |
Leaves fresh mint, chopped | 6-8 leaves | |
Leaves fresh basil, chopped | 6-8 leaves | |
Lemon, juiced | 1 medium | |
Extra virgin olive oil | 1/4 cup | |
Salt & Pepper, to taste |
Perfect Vegetarian Recipe for a Side Dish or Light Lunch.
Apple Couscous Salad Recipe Directions:
- Cook couscous in lightly salted water according to package instructions. Couscous should be prepared al dente. When finished cooking set aside.
- In a large serving bowl add apples, parsley, dill, mint and basil. Toss to combine.
- Add couscous to bowl. Combine with apple and herb mixture.
- Prepare dressing by combining lemon juice, olive oil and salt in a small bowl or jar.
- Pour dressing over salad mixture and gently toss to combine.
- Serve immediately.
